Do you know what I love? Friends and food. Oh yeah.
Okay, you’re getting confused.
I don’t know if I have complained here that we got A TON of courgettes this year and we have no idea what to do with them. I usually use them for soup and that’s about it.
While living this sad, sad dilemma, I come upon the sweetest lady and blogger, Sophie, who blogs over at Foodzesty, which might just be my absolute new favorite cooking blog (I love you all but, when you fall in love, you fall in love).
She suggested this wonderful recipe Courgette Pie (Kolokythopita), that I have yet to try, but which brought me great hope on being able to use up my HUGE zucchinis, instead of trashing them.
We got chatting and I’m very confident I’ve made a new sweet, sweet friend. She’s so awesome she has just posted yet another courgette based recipe, Courgette Patties with Tzaziki Dip, which made me decide I want to marry her!! Now I have two awesome recipes to try this weekend, using the beautiful and plentiful zucchinis.
She’s even more lovely because she actually mentioned me in her post, which might have contributed to my marriage proposal.
Hello everyone, The other day I was chatting with a really sweet new blogger friend, in regards to recipes with Courgettes/Zucchinis. She mentioned that her garden is filled with Courgettes, and besides soups she really didn’t know what else to do with them. So, because I know she is a very busy bee, I am posting another recipe that I think she will enjoy, as I hope you will too. 🙂

Meanwhile, Mr.R decided to take matters into his own hands and bake a lemon, carrot and zucchini cake. I’m anxiously waiting for it to come out. I’ll let you know.

I tried making ratatouille with them last year and although I ate it, I’m not in a hurry to ever make it again or eat courgette again!

hahahaha I understand. I’m on strike with a few vegetables. Maybe strike is not the right word. Divorce might be closer to the right meaning. *looking at you Avocado, celery and radish*

hahaha. I had to laugh about just eat something before visiting the blog. I have several food/recipe/cooking blogs I frequent, I save them for last, and eat first! LOL Foodzesty is great!

I have a hard time with cooking/food blogs. Some serious mouth watering issues. Then I have to get a bucket for all the drool and it’s a mess. So I eat beforehand 🙂

Rui’s instagram photos are beautiful! Lovely produce and I love courgettes mostly grilled. But I like the idea of the pie. I shall look it up. How did the cake turn out? Is that why you are chasing him with a pillow 😉

I love his Instagram page. It’s so colorful. I’ve never tried them grilled either. You guys are full of recipes, I’ll be eating courgettes for a whole month straight hahaha. The cake turned out fine but didn’t grow, which I was expecting because I think our oven has something to do with it. Too “modern” I think. We don’t know which resistance to turn on, the temperatures are all over the place, the programs too. Bah.. Nope, it was other issue. But that’s okay. I no longer want to kill him. For now. xx

I have no idea what to do with courgettes, or what they are if I’m being honest. Are they like zucchinis? 😀

Hey Angie, they’re zucchinis, yes!! I don’t have many ideas either lol I’ve been using them in soups for years. They’re a great way to cut on carbs by substituting potatoes in soups. By I’ve been sent a few amazing recipes now. I can’t wait to try them. Thank you. It was actually supposed to be my new header image (the rose background) but I couldn’t find the way for it to fit without stretching them image. bah, I’m bad at those things. I’m glad you liked it, I didn’t have one. I’ve seen such cute ones.

It turned out really good, actually. The lemon flavor stands out and the smell is just delicious. It’s a very moist type of cake, we liked it 🙂

Mmmmm sounds so good (: I’ve tried gluten-free zucchini and carrot muffins from the frozen section at the store before and they were amazing, but I’ve never made any myself. If you guys used a recipe, I’d love to give it a go?

I’ve never been the biggest zucchini fan but my mom puts it in everything! She makes this insane zucchini frittatta that’s totally worth trying out if you have the zucchinis! Or zucchini muffins…

I love zucchini and a couple of years ago we had a bountiful supply. I found a chocolate zucchini cake. So moist and very yummy. I even made them into cupcakes. I also love to dunk them in egg wash and then crushed almonds…and fry them so tasty. I have a ton of recipes I must find them and share with you xx
