Nameless recipe #2

Today I have another recipe for you!

This one is not vegetarian, sorry. I used turkey meat and loads of veggies, so you can take the meat out and have a vegetarian recipe!! Not so bad, huh?

So let’s see what I was up to in my kitchen:

Ingredients:

  • 2 cups of rice (you can use cups, mugs, glasses, whatever, as long as you have the same measure);
  • 400 g of turkey (we call it turkey steak here, but it’s more of a turkey meat cut really thin);
  • Green beans (I used about 200 g);
  • Brussels sprouts (about 200 g);
  • Mediterranean vegetable mix to saute (I buy these “themed” mixes sometimes. There’s Mediterranean, oriental, etc. and I used half a bag so about 200 g);
  • Peas (about 100 g);
  • A medium onion;
  • Tomato pulp (made only with tomatoes, no sugar or anything like that);
  • Garlic powder;
  • Olive oil;
  • Salt and pepper or whatever herbs you feel like using;

*You can use whatever veggies you have on hand, frozen or fresh. I used just frozen this time because that’s what I had;

** The quantities can vary as well, you can put more peas than green beans, if you prefer them. There’s no rule here, as long as you load on the veggies;

Instructions:

The rice – this time I made just plain garlic rice, but I could have made it with spinach, carrots and peas, green beans, any veggies at all, really!

  1. Get a drizzle of olive oil and some garlic powder in a pot/pan (whatever you use);
  2. Once the olive oil is hot, add two cups of rice and let them “fry”;
  3. Add salt and pepper to taste;
  4. Add 4 cups of hot water (the same measure you used for the rice);
  5. Let it boil until the rice is almost dry;

The meat and vegetables:

  1. Add some olive oil (enough to saute the turkey), a medium chopped onion and garlic powder to a wok or pan (I use a wok):

2. Wait until the onion is cooked (yellow) and add the turkey meat:

3. Stir with a spoon (I use wooden spoons) so the turkey can cook thoroughly (you let it get white) and then add the veggies:

4. Add some salt, pepper and your herbs of choice, stir everything together and add the tomato pulp:

And it’s done!!

I served it with a tomato, onion and sweet corn salad:

P.S. I’ve just realized I’m not good at giving recipe instructions. They sound like they’re not going to help anybody. Fell free to ask any questions.

You also now I suck at taking photos and don’t even bother to edit them. So sorry, need to work on that!

  1. This looks very tempting! I usually use one part rice to two parts water (ie. if one cup of rice then two cups of water). Have you used the same for each? I can never get it quite right so the rice is either too dry or too soggy and disintegrating! x
